Bakpao is adopted from the Hokkien name 肉包, which literally means meat dumpling or bun. Otak-Otak is popular in Indonesia, Malaysia and Singapore but in fact with their variations. I find the Indonesian version to vary essentially the most from the opposite regions, being mostly pale whitish in shade with solely little or no chili inside the fish paste mix itself. The Jakarta otak fish paste is generally made with ikan tenggiri , coconut milk, lemongrass and spices, and is grilled or steamed in banana leaf like different variations of otak for added perfume.
